60 Minute Sunday- Episode 29

Welcome to this weeks 60 minute Sunday where we are focussing on all the lovely fruit and veg in season! I wanted to get plenty of berries in the recipes as they are at their best at the moment and we get all those amazing nutrients!!! For breakfast this week we have cheesecake sheet pan protein pancakes, for lunch we have a Mexican chickpea grain bowl and for a snack we’ve got a blueberry and white chocolate loaf (which is my favourite bake in ages !!) Cheesecake Sheet Pan Pancakes

I loooove pancakes but don’t like the faff of making them so if you are the same you will love these prepable cheesecake sheet pan pancakes!! They’re packed with 14g protein per slice from the Greek yoghurt and you can customise with whichever toppings you prefer- I added some yoghurt and berries on top for a cheesecake vibe but even topping with chocolate chips, mixed nuts or some berries would be so good!! I think this is a great one for any little ones to get involved with too!

Mexican Chickpea Salad

If you have ever seen the pouches of mixed grains at the supermarket and wondered what recipe you could use them in- here is the one- it’s sooo summery, packed with flavour, protein and lots of fibre too! The mixed grain pouches are a great and really convenient way to pack in some extra fibre and plant points to meals!! I just used the Tesco seasoned grains pouches in this one but Aldi also do some lovely Spanish ones which would work great!! Feel free to sub for microwave rice if you prefer!!

Blueberry White Chocolate Loaf Cake

It is peak blueberry season at the moment and I wanted to make sure we’re making the most of them and get in all the antioxidants, vitamin C, K and manganese! They also taste sooo much better this time of year and I love blueberries and white chocolate together and this didn’t disappoint! It’s a lovely little afternoon snack with a coffee but also has a good amount of protein and fibre to make a great meal prep breakfast- it’s so good popped in the microwave for a few seconds with a dollop of yoghurt and some honey!!!
