60 Minute Sunday Episode 17 Recipes

Welcome to the 17th episode of Sixty Minute Sunday! This week we have avocado brownies as a snack (the healthy fats make these super satisfying and fudgy!!) we have lemon & blueberry cheesecake baked oats for breakfast (summer breakfast winner!!!!) and as a lunch option I have got this marry me chicken sandwich filler (super packed with protein and sooo versatile, loved this one!). Avocado Brownies

I am back sneaking veggies into bakes again and this time we have avocado brownies! The avocado acts as a replacement for oil or butter but still provides some healthy fats and creaminess meaning these brownies are still super fudgy and the healthy fats help us to stay fuller for longer meaning they are really satisfying and they are also a great one for little ones to get involved in if you fancy some weekend baking! Lemon & Blueberry Cheesecake Baked Oats

I am gutted it has started raining as this breakfast has been incredible in this sunny weather! I think lemon and blueberry are a match made in heaven and such a lovely summery combo and this is my first summery style baked oats! Its bursting with juicy blueberries and a lovely cheesecake topping with that citrus from the lemon- SOO good! If you love this flavour combo too then you will love these for the week ahead!

Marry Me Chicken Sandwich Filler

If you have tried and loved the viral marry me chicken recipe, this is my take but as a sandwich filler! This is SUPER high in protein with 2 veggies in there too and it is sooo versatile! It is great loaded on a thick slice of sourdough, stuffed into a tortilla or works lovely just on top of a base of lettuce! I hope you love this one, it is just sooo good!!!!
